Signorvino Rome. On April 21, 2021, the third store of Signorvino, a renowned chain of gastronomic wine bars created by Sandro Veronesi. After the headquarters of Roman Castle and Maximo Center, Signorvino arrives in the heart of the historic center, a Barberini square. This opening adds to the lineup of new establishments that are opening in the capital, after months of uncertainty on the catering front.
The concept proposed by Signorvino is that of awine bar with kitchen, where food and wine come together in a union capable of making the most of different products of excellence. But this is not just a restaurant. The winning idea of the president of the Calzedonia group was to “rejuvenate” the world of oenology by creating an innovative format, able to make the enoteca environment accessible, always considered something reserved for enthusiasts and connoisseurs. Signorvino undermines these rules, making wine within everyone’s reach. How? With a bright and inviting environment; clear and accessible information; competitive prices without excessive markups; events and courses on the world of wine also suitable for beginners; concrete support in the choice and purchase of bottles (the staff is trained and updated, those who work at Signorvino are, in fact, instructed by what we can define as a 2.0 sommelier, the wine specialist); the presence of temporary promotions and a loyalty program to access various discounts and news.
It store of Barberini it develops through a space multifunctional. Spread across multiple levels, physical and metaphorical: it can be a simple one shop, where to buy a bottle by choosing from a wide national and regional proposal; but also a training environment, in which to participate in wine courses, meetings and tastings; finally, a ristorante, with a menu full of Italian recipes.
The format therefore does not forget the importance of food in this modern conception of popular wine bar. The selection of labels is accompanied by a search for raw material, with particular preference for local companies, virtuous supply chains and branded products slow food. The goal is to propose one kitchen simple, in which the ingredients can truly remain the protagonists of the dish. In headquarters of Barberini it is possible to find different proposals suitable forappetizer, come toast (8 euros) o whims and fried to share (6 euros), but above all cutting boards composed of several cured meats and cheeses selected. It starts from the most minimal one with mortadella gran Riserva “Palmieri” and fried dumplings (9 euros) up to the imperial cutting board, served with six types of cured meats, five of cheeses and accompanied by focaccia, fried dumpling, composed e giardiniera (39 euros). There is no shortage of first, second and side dishes of the Italian tradition such as spaghetti c’a pummarola (10 euros), workhorse prepared with Monograno Felicetti pasta, or la carbonara (10 euros) as a tribute to Rome. Also on the menu are proposals that use wine as a preparation ingredient: for example the galletto with potatoes and Gewürtraminer mayonnaise (14 euros) or the Signorburger with red wine bun (14 euros). For those who cannot give up the dessert, but cannot choose just one to order, there is the possibility to ask for a trio of tastings with tiramisu, chocolate salami and sbrisolona (9 euros). The presence in the menu of suggestions for pairing between the desired dish and the most suitable glass of wine.
The environment and events
The locale it has the same style as the other stores (twenty-two throughout Italy). Informal, sober, clean environment and with an industrial twist. Are available 24 seats outside, overlooking the fountain of Piazza Barberini or distributed along via Veneto, e 50 inside, divided between ground floor and second floor, with large windows overlooking the square.
As we have already analyzed, wine remains the heart of the whole project: more than 2000 labels in the catalog, from the most precious (Barolo Monfortino by Giacomo Conterno) to the most whimsical (Vitovska by Matej Skaterlj). Without giving up a specific Lazio selection, with companies False e Tenimenti Leone. The latter is the bottle dedicated to the capital: the Roma Doc Capoccia.
Covid permitting are already planned, starting from autumn, numerous events for wine lovers.
