Salmon marinated in dill with olive powder. Pumpkin risotto. And then, sea bass fillets. These are the main dishes of the dinner offered last night by Sergio Mattarella to the leaders who arrived in Rome for the G20. Flanked by Mario Draghi and his wife Serena, the President of the Republic welcomed the heads of state and spouses to the party hall with his daughter Laura with a menu created by Fabrizio Boca. Romano, 52, the chef of the Quirinale. He arrived at the palace very young, in 1994. In this way he saw first Oscar Luigi Scalfaro, then Carlo Azeglio Ciampi and Giorgio Napolitano.

In my kitchen all Italian and traditional, from the ingredients to the recipes. There are no contaminations, but a deep search for excellence through simple raw materials from niche companies, which work in a sustainable way, explains the chef, who with some of the executive chefs of the most important heads of state belongs to the exclusive Club des Chefs des Chefs, which organizes charity dinners around the world. I believe that my work must be a calling card of Italy and of the commitment of its small artisans, explains Boca. Furthermore, in order to guarantee products that are always genuine – but also cheap, at the Quirinale, crazy expenses are not allowed, he has repeatedly specified – many ingredients are self-produced. They come from the garden of the presidential estate of Castelporziano, 25 kilometers from the center of the capital. A historic place, now open to the public. A few examples? The vegetables served last night with the second of fish. Or the vegetables that made up the side dish: tomato and celeriac puff pastry, artichoke hearts and stuffed potatoes. But also some of the ingredients of the dessert proposed to the world’s leaders: a delicate steamed mandarin cream.
