Starting with the first recipe, we will discover how to taste the peel of the pickled watermelon. You have to take the peels, cut them into small pieces and put them in containers with cold water, salt and a few small ice cubes.
After about 3 hours, you will have to drain the peel pieces, rinse them and cook them in the water, waiting for them to soften. After this part, a second pan must be prepared with sugar, cloves, water and white wine vinegar to boil for about 5 minutes.
Subsequently, the peels must be drained by adding them to the syrup with some lemon slices. Finally, all the mixture must rest for one night in the refrigerator (or at least 8 hours).
At the end of this phase, you will then have to take a new pan and cook the syrup over low heat for at least 1 hour.
Finally, it will be necessary to put the skins and their hot syrup in airtight glass jars, close them and let them cool.

The second recipe is watermelon jam and it is very simple to prepare. First you have to remove the peel of the green part, using a small knife, then you can take the white pulp and put it in a pot with a little sugar.
It is cooked for an hour, stirring constantly to ensure that it does not stick and then it is placed in pre-prepared and sterilized jars.
