If you have a whole pumpkin available, it is advisable to cut it in half and use only part of it.

Wash the pumpkin thoroughly under running water before proceeding by removing the peel and removing the stalk. After dividing the pulp into smaller pieces, it can be boiled in a very large pot together with two liters of water and salt.

Cook for about an hour on low heat until the pumpkin has completely flaked.

In the meantime, take the onion and, after having cleaned and cut it, put it in a pan with a little extra virgin olive oil. Add salt and cook over low heat without getting brown. If necessary, pour a little water into the pan.

Once the pumpkin is cooked, put it in a mixer together with the onion and blend everything. Grate a little ginger, about ten grams, to add to the pumpkin. It is advisable not to overdo it if you do not want an overly spicy and strong flavor.
