The pandemic has dealt a severe blow to catering and gastronomy, causing the closure of many businesses and forcing professionals to rethink their profession. In many cases, we reinvent ourselves with delivery – even gourmet – to survive. But traditional practices have also been rediscovered, re-evaluated and reinterpreted, opening up new growth prospects. Like that of bread making. Bread and ovens they have (re) earned their space by marking a real revenge of an emblematic art of our culture. On the one hand, it was us amateurs who became skilled home bakers, struggling with dough and pizzas, a bit like our grandmothers did every day (see also: How to make crispy and well leavened wholemeal bread at home). On the other hand, i ovens they played an important role in saving jobs, especially for those who, due to the virus, had to stop other activities, focusing only on baking. We had to get by, but necessity didn’t clip the wings of creativity and imagination. Thus new ideas and workshops were born. Virtual showcases, sustainable formats e bakeryof the latest generation close to pastry (find out which are the best in Italy), with adjoining bistro and café. Above all, many young people have become passionate about this world with a desire to do it by specializing and not in an improvised way: there are those who have courageously launched themselves into new adventures and openings with innovative proposals with an ethnic scent, and those who have renewed their family business respecting tradition. Every year the Gambero Rosso collects in the Pane Pane & Panettieri d’Italia guide the realities that are best expressed in white art and properly ennoble the flour. In the 2022 Guide, 50 bakeries received the 3 loaves, the highest recognition of the brochure. Three special prizes instead. In this article we propose the awarded excellences, from North to South.
