It’s not Christmas if panettone is missing on the table. But that it is strictly artisanal, prepared as tradition dictates only with fresh ingredients, a long leavening, a lot of care and attention. Like the one reserved for their creations by “Artists of Panettone”, expected in weekend of 11 and 12 December in Milan.
An event entirely dedicated to Milanese dessert par excellence, with tastings, live cooking and final challenge with awarding of the pastry chef author of best panettone.

The 14 Artists of Panettone

The team, led by master Vincenzo Santoro of Pasticceria Martesana in Milan, is made up of: Luigi Biasetto, Paolo Sacchetti, Salvatore De Riso, Andrea Tortora, Vincenzo Tiri, Maurizio Bonanomi, Andrea Besuschio, Lucca Cantarin, Stefano Laghi, the Pepe brothers, Carmen Vecchione, Francesco Borioli of the Infermentum Laboratory and Mattia Premoli. All great names on the Italian scene.
They will be the protagonists of the event to be held in Palazzo Bovara, in corso Venezia, 51. A weekend dedicated to the gluttonous public, with free masterclasses and tastings of artisan panettone, aimed at revealing how a real artisan panettone is recognized and at suggesting new and tasty combinations (subject to availability).
Along with so much sweetness, there will be salty interpretations curated by APCI chefs, such as Tommaso Arrigoni, Vincenzo and Salvatore Butticé, Lorenzo Buraschi, Theo Penati, Giuseppe Postorino, Sara Preceruti, Andrea Provenzani and Fabio Zanetello. Among the novelties of the 2021 edition, there is also space for mixology with cocktails signed by flair bartender Giorgio Facchinetti.

Innovative Panettone and final prize

The protagonist of Saturday will be the “Innovative Panettone” by Matteo Cunsolo, president of the Bakers Association who, in collaboration with the students of Capac, will make two Italian specialties in a single product. The students of Capac will also present their panettone under the guidance of pastry chef Giordano Villa and chef from Apci. Finally, Gianni Cocco, master of coffee, will prepare the “Molecular Panettone” and the “Christmas Drink”.
