A low-cost fish that is very digestible and that brings a good dose of omega 3 to the body, is the mullet. It is fished in Sardinia, Tuscany, Veneto and in the various areas of the Mediterranean sea. A poor fish but rich in benefits prepared for gourmets is truly delicious, recommended in food diets for its digestibility.
Among the fish dishes considered “poor” but very good, there are also anchovies, here are two recommended recipes:

Gourmet baby cephalins are easy to make, requiring 20 minutes to prepare. The ingredients for four people are:
a) four mullets of about 160 grams each;
b) 250 grams of red peppers;
c) 450 grams of potatoes;
d) 200 grams of pitted black olives;
e) a teaspoon of chopped parsley;
f) four tablespoons of oil
g) chopped rosemary and sage to taste;
h) two cloves of garlic;
i) salt and pepper to taste.

Preparation is simple and starts with cleaning the fish. Scale the cephalins well with a knife, remove the entrails and wash under running water. Then dry them with absorbent paper.
Arrange the mullets on a high-sided baking tray and season with 2 tablespoons of oil, garlic, pepper, salt and the chopped herbs. Bake in the oven at 180 degrees for 20 minutes.
Meanwhile, peel the potatoes and boil them in salted water. From the boil, cook for about 20 minutes. Be careful, because they must not break. Drain and cut into slices not too thick. Then, place the baby cephalins in an oval pan and distribute the sliced potatoes around them.
Finally, clean the peppers and cut into thin strips and arrange on the potatoes. Also add the olives.
Put the baby ceps in the oven and cook them au gratin under the grill at 180 degrees for about ten minutes. Add salt and chopped parsley to taste and then serve hot.
